Carob Honey

Carob is the evergreen tree found in the southern regions of Greece and particularly in Crete. During the war occupation of Crete, carob’s pods were dried and used as a chocolate substitute.

The tree flowers in autumn and bees collect its nectar producing one of the most rich and aromatic honeys you will ever taste.

Carob honey has a characteristic scent reminiscent of grassy lawn and its taste reminds of caramel and chocolate. It is indeed one of the most complex flavored honeys, which complements nicely a slice of matured cheese.

Accompanying its unique taste, is its exceptional amber colour, generally classifying it as a dark-colored honey.

The carob honey has a very short lifespan before it crystallizes, from 1 to 2 months, after its harvest. After the crystallization, it takes on a beautiful orange hue.
